Cinnabutter Cookies

  • 4 tablespoons sparkling sugar or granulated sugar
  • 1 tablespoon cinnamon
  • Cookies:

  • 2 1/2 cups plus 2 tablespoons of all purpose flour
  • 1 tablespoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pink Himalayan sea salt or any sea salt
  • 1 cup dark brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened to room temperature
  • 1 tablespoon pure vanilla extract

Preheat your oven to 300º
In a medium bowl, whisk together all dry ingredients: flour, cinnamon, baking soda and sea salt. I love Pink Himalayan Sea Salt -- but any sea salt will work.

In a large bowl with an electric mixer, cream the butter and sugars.

Beat in the eggs and vanilla until just combined.

Add the flour mixture and stir until all is combined.

Use an ice cream scooper or a large tablespoon to form dough into balls. Place in the refrigerator for about 20 minutes. The colder dough is easier to work with when you pop them into the ziplock bag of cinnamon sugar topping magic.

For the Topping:
In a large zip lock bag combine the cinnamon with the sparkling sugar – I love it because of its consistency and its name, let’s be honest – I want anything and everything to be sparkly. (granulated sugar works just as well). Drop a couple of the dough balls into the bag of sugar and cinnamon and shake them around to ensure consistent and thorough coating.

After the balls come out of the Magic Sugar Cinnamon Topping they should look like this:

Place on cookie sheet. To allow room for the cookies to expand, orient the cookie balls so that you have 12 per cookie sheet. It should look like this.

Bake for 20 minutes and then share with your loved ones.
